Fantasy of Spring Sorbets
This sugar swan with sorbet was created for State Dinner in honor of King Birendra and Queen Aishwarya of Nepal on December 7, 1988, during the Ronald Reagan administration. The fanciful and springy dessert consisted of pulled-sugar swan nibbling on sugar cherry blossoms, with rose-shaped fruit sorbets cascading down it's wing. Finally, the entire ensemble was completed with a bouquet of pulled-sugar flowers, raspberries, and melon balls.
